Big Bowl Cheese Dip

Big Bowl Cheese Dip ...a nice superbowl recipe to try !
INGREDIENTS
  • 1/2 cup diced onion
  • 1 cup regular OR non-alcoholic beer
  • 8-ounces (2 cups) shredded Cheddar cheese
  • 8-ounces (2 cups) shredded Pepper Jack cheese
  • 2 tablespoons all-purpose flour
  • 1 1/2 tablespoons taco seasoning
  • 1 to 2 tablespoons chopped chipotle pepper in adobo sauce
  • 1 cup sour cream
  • Tortilla chips, roasted potato wedges, for dipping
INSTRUCTIONS
1. Place onion and beer in a heavy medium-size saucepan. Heat to boiling. Reduce heat and simmer 3 to 4 minutes.
2. In a large bowl combine cheeses, flour and taco seasoning. Slowly add handfuls to hot beer until melted. Repeat until all of the cheese is used. Stir in chipotle pepper and sour cream.
The superbowl recipe makes 20 servings....great one !

INGREDIENTS
  • 2 tablespoons ALBERS Yellow Corn Meal
  • 1 tablespoon chili powder
  • 3 (8-ounce) packages cream cheese softened
  • 2 large eggs
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons ground cumin
  • 2 (4-ounce) cans ORTEGA® Diced Green Chiles
  • 1 cup (about 8) sliced green onions, divided use
  • 1 (16-ounce) jar ORTEGA Mild Salsa, or any flavor - divided use
  • 2 cups (8-ounces) shredded cheddar cheese, divided use
  • Garnish: tortilla chips, assorted crackers and/or sliced baguette
INSTRUCTIONS
1. Preheat oven to 325°F (160°C). Heavily grease bottom and side of 9-inch springform pan. Combine corn meal and chili powder; sprinkle over bottom and side of prepared pan.
2. Beat cream cheese, eggs, garlic powder, and cumin in large mixer bowl until smooth; stir in chiles and 1/2 cup green onion.
Pour half of batter into pan. Spoon 1 cup salsa over top of batter; sprinkle 1 1/2 cups cheddar cheese over salsa. Spread remaining batter over top of cheese.
3. Bake for 55 to 60 minutes or until edges are set but center still moves slightly. Cool completely in pan on wire rack; remove side of springform pan. Spread remaining salsa over top; sprinkle
with remaining cheese and green onion. Serve with tortilla chips. The superbowl recipe of baked Chile cheese is ready to serve...nice !

Artichoke Chile Dip

INGREDIENTS
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1 cup freshly grated Parmesan cheese, divided use
  • 3/4 cup sour cream
  • 3/4 cup mayonnaise
  • 1/2 (4-ounce) can ORTEGA® Diced Green Chiles
  • 1 clove garlic, finely chopped
INSTRUCTIONS
1. Preheat oven to 350*F.
2. Combine artichokes, 3/4cup cheese, sour cream, mayonnaise, chiles and garlic in medium bowl; stir well. Spoon into a lightly greased, 1-quart casserole dish. Sprinkle with remaining cheese.
3. Bake for 25 to 30 minutes or until bubbly. Serve with bread cubes, pita wedges or tortilla chips. Makes 3 Cups Approximately. The Superbowl recipe is ready to serve...enjoy !

7 Layer Fiesta Dip...try this great Superbowl recipe..nice !

INGREDIENTS
  • 2 (8-ounce) packages low-fat cream cheese, softened
  • 2 tablespoons taco seasoning mix (your favorite brand)
  • 2 cups prepared guacamole (make your own or use ready-made)
  • 2 cups tomato-based salsa
  • 2 cups finely shredded iceberg lettuce
  • 2 cups shredded cheddar cheese
  • 1 cup chopped green onions
  • 2 (2-ounce) cans sliced black olives
INSTRUCTIONS
1. In a small bowl, mix together cream cheese and seasoning mix. Spread mixture evenly onto the bottom of a 13 x 9 x 2-inch glass dish.
2. Top the seasoned cream cheese with the guacamole, salsa, lettuce, cheese, onions and olives in layers.
3. Serve immediately accompanied with tortilla or corn chips.
4. Refrigerate any remaining dip. The Superbowl recipe is ready to serve and makes 20 servings...Great taste. Enjoy !
